5 Awesome Dinners For Under 350 Calories

These meals prove you can eat delicious foods without loading up on calories. You get the variety you crave without the pounds you loathe! To cut down on the salt, switch out some of the sauces.

1. Who Doesn’t Love A Burger?

Skinny Bleu Cheese Stuffed Buffalo Burgers

Prep time: 5 minutes

Cook time: 8-10 minutes

Yield: 4 servings

Serving size: 1 hamburger with bun

Ingredients

1 pound lean ground beef
¼ tsp salt
½ tsp black pepper
1 tsp garlic powder
1 tsp onion powder
1 tsp Worcestershire sauce
¼ cup Franks® Red Hot Original Sauce
6 Tbsp reduced-fat bleu cheese crumbles (1½ Tbsp for each burger)
4 whole-wheat buns
Optional Toppings*:
White onion, cut into rings and grilled
Iceberg lettuce leaves
Tomato, sliced
*Optional ingredients not included in the nutritional calculations.
Instructions

Using clean hands, combine the beef, salt, black pepper, garlic powder, onion powder, Worcestershire and hot sauce together in a large bowl.
Divide the meat into 4 equal-sized patties, and form a very flat hamburger by pressing with your palms.
Put 1 Tbsp of bleu cheese into each hamburger, and fold it over into itself to seal the cheese in the center. Reshape the beef into equal-size hamburgers, and make a slight thumb indentation in the center of each. That keeps them flat while grilling.
Lightly oil the grill grates with vegetable oil or nonstick cooking spray. Grill hamburgers for about 4 minutes on each side, or until desired doneness.
Serve with the remaining ½ Tbsp of bleu cheese for each hamburger, and optional toppings as desired.

Turkey Enchilada Casserole

Prep time: 20 minutes

Cook time: 30-35 minutes

Yield: 6 servings

Serving size: 1/6 of recipe

Ingredients

½ lb lean ground turkey
1 cup onions, chopped
½ tsp garlic, minced
1 tsp chili powder
½ tsp ground cumin
15 oz can black beans, drained + rinsed
10 oz can Rotel® Original Diced Tomatoes and Green Chilies, drained
1 cup reduced-fat sour cream
½ cup yellow corn, if canned, drain + rinse
¼ cup low-fat cottage cheese
¼ tsp garlic powder
4 – 9″ La Tortilla Factory Smart & Delicious™ Low-Carb, High Fiber Tortillas
10 oz can red enchilada sauce
½ cup reduced-fat, shredded cheddar cheese
Instructions

Preheat oven to 350 degrees.
Coat a 9 inch square baking dish with nonstick cooking spray.
In a large nonstick pan, cook the ground turkey, onions, garlic, chili powder and cumin over medium-high heat until onions are tender and turkey is no longer pink.
Stir in black beans and Rotel® and mix well. Remove from heat and set aside.
In a small bowl, stir together sour cream, corn, cottage cheese and garlic powder.
Place 2 tortillas overlapping on the bottom of pan.
Top with half the turkey mixture, half the sour cream mixture and half the enchilada sauce. Repeat layers.
Bake covered for 30-35 minutes until heated through.
Remove from oven and sprinkle cheese evenly over the top of the casserole.
Bake uncovered for about 10 minutes or until cheese is melted.
Remove from oven and let sit for about 10 minutes to set

Cook time: 15-18 minutes

Ingredients

20 chicken wings
½ cup flour
½ cup hot sauce (I used Frank’s® Red Hot Sauce)
¼ tsp paprika
½ tsp red cayenne pepper
¼ tsp salt
1 tsp black pepper
1 ½ Tbsp light butter
½ Tbsp minced garlic
Instructions

In a large bowl, mix together flour, paprika, cayenne pepper, and salt. Toss chicken wings in flour mixture a few at a time. Shake off extra and place on baking sheet.
Refrigerate for 45 minutes, uncovered.
Preheat oven to 400 degrees. Spray a baking sheet with nonstick cooking spray or line with parchment paper for easy clean up.
Bake wings in preheated oven until no longer pink at the bone and juices run clear, about 15-18 minutes per side.
Meanwhile, in a medium sauce pan, combine butter, hot sauce, pepper, and garlic and cook over low heat. Cook and stir until butter is melted and mixture is well blended, about 2-3 minutes.
Remove chicken wings from oven and place wings in serving bowl. Pour hot sauce mixture over the chicken wings evenly, and mix well.

The quickest and easiest baked chicken with an amazingly creamy, cheesy Ranch topping!

Ingredients

1/2 cup mayonnaise
1/2 cup shredded sharp cheddar cheese
1 (1-ounce) package Ranch Seasoning and Salad Dressing Mix
3 cloves garlic, minced
8 boneless, skinless chicken thighs
Kosher salt and freshly ground black pepper, to taste
1/3 cup Panko*
2 tablespoons chopped fresh parsley leaves
Instructions

Preheat oven to 400 degrees F. Lightly oil a 9×13 baking dish or coat with nonstick spray.
In a small bowl, whisk together mayonnaise, cheese, Ranch Seasoning and garlic.
Season chicken thighs with salt and pepper, to taste. Place chicken in a single layer onto the prepared baking dish and top with mayonnaise mixture. Sprinkle with Panko.
Place into oven and cook until completely cooked through and golden brown on top, reaching an internal temperature of 175 degrees F, about 25-30 minutes.
Serve immediately, garnished with parsley, if desired.
Notes

*Panko is a Japanese-style breadcrumb and can be found in the Asian section of your local grocery store.
