We need to pay attention to breakfast. It’s the meal that sets us up for the rest of the day. Yet, so often, it is so rushed. What to do? Here’s some simple, but satisfying (and healthy) choices for you.
1. Breakfast On The Go

Classic toast with a delicious twist: a PB sandwich with sliced bananas and a sprinkle of chia has 6 times more calcium than milk. Or, try pieces of avocado with 2 sunny side up eggs (or any type of egg). Serve either open faced or add a second piece of bread and make into a sandwich. (Make sure you use healthy bread.)
2. Make This One Ahead Of Time

Beat a dozen eggs in a large bowl. Add your favorite veggies (bell pepper, tomatoes, onion) and cheese. Season with your choice of salt, pepper or garlic powder. Then pour into lightly seasoned muffin cups and bake at 350 degrees for 20-25 minutes.
3. Breakfast Burritos Are Another Make Ahead Breakfast

Vegetarian or with a bit of meat, make a bunch and keep in the freezer until your cravings call. These are a great breakfast if you’re on the go. Eggs, beans, cheese and most veggies freeze well, but toppings do not. Let your ingredients cool before assembling otherwise, the burritos can become soggy. Wrap them well in heavy duty aluminum foil. They can stay good for a month.
4. Stuffed Apples

Here’s a yummy treat. Cut an apple in half and remove the core. Put 2 teaspoons of any type of nut butter and sprinkle with granola. Wrap well to save for later.
5. Overnight Blueberry Surprise

Combine oats, chia seeds, blueberries, vanilla, milk and a bit of yogurt in a sealed container. In the morning, you’ll find a cereal of delicious oats. Heat in the microwave for 1-2 minutes, or you can eat cold!
